Taiwan pasty chef Chen Li zhi took the top prize in the first Global Pastry Chefs Challenge in Norway Sunday – with a creation he said highlights the importance of protecting the earth.
Chen’s pastry work – titled “The 3-D Reflection of Deep Blue Ocean” – was an edible depiction of a humpback whale leaping out of a picture frame housing an ocean made of sugar.
Chen is currently head chef at the R&D department at Taiwan’s 85 Degrees C Bakery Cafe.
Contenders in the Global Pastry Chefs Challenge were given less than 10 hours to create their works.
According to the cafe chain, Chen spent 15 hours every day over the last year practicing making the winning work and trying to perfect all the details.
